Stuffed Mushrooms, Mix of Breaded and Not Breaded

Ingredients

  • 6 large and 9 smaller fresh whole button mushrooms
  • 6 tablespoons 1/3-less-fat cream cheese, softened
  • 3 tablespoons reduced fat shredded cheese of your choice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

1 cup bread crumbs

  • 1/4 cup all-purpose flour
  • 2 large eggs, lightly beaten

How to Make It

Step 1
Remove stems from mushroom caps. Clean the mushrooms, I use a vegetable brush, but you can use a wet paper towel. Stir together cream cheese and cheese of your choice, salt, and pepper in a small bowl. Stuff about 1/2- 1 teaspoon mixture into each mushroom cap. For the smaller mushrooms I leave as is. For the larger mushrooms I cover in bread crumbs….see step 2.

Step 2
Place panko in a shallow bowl. Place flour in a second shallow bowl, and eggs in a third shallow bowl. Coat large mushrooms in flour, dip in egg mixture, and dredge in breadcrumbs, pressing to adhere.

Step 3
Place smaller mushrooms in an air fryer and cook at 350 F until golden brown about 15 minutes. Place larger mushrooms with breading, in the air fryer, cook at 350 F for 20 minutes until golden brown.

You can serve mushrooms with a dip of your choice such as reduced fat ranch or eat without dip. Either way they are delicious.
