Hearty Cottage Pie

  • 2.3 lbs of lean ground beef
  • 6 large yellow potatoes
  • 1 large white onion
  • 32 oz of beef broth
  • 1 cup of all purpose flour
  • 16 oz fresh green beans
  • 6 large carrots
  • Shredded mild cheddar cheese (optional)

Peel potatoes and dice them to be boiled and mashed. Cut up green beans and dice the onion and carrots as well.

Boil potatoes in a saucepan and also boil the green beans and carrots in a separate saucepan.

Next cook and brown off the ground beef in a large frying pan with a splash of oil. Drain off the excess liquid and then add the diced onion to the pan and combine with the beef.

Pour the beef broth over the beef and onions and simmer. Add the cup of flour and stir in well to thicken the broth.

Strain off the potatoes and mash them.

Strain off the boiled vegetables and add them to the ground beef and onion mix.

In a large casserole dish add the ground beef and vegetable mix, then layer over the top with the mashed potatoes.

Run a fork over the mashed potatoes to flatten and create grooves in the mash.

For optional goodness you can sprinkle some shredded mild cheddar over the top of the mash.

Finally, put into a preheated oven (375℉) and bake for about 20 minutes.

Serves 4 to 6 people.
