Ingredients:
- 4 tablespoons regular butter, room temperature
- ¾ cup of brown sugar
- 1 large egg
- 1 teaspoon pure vanilla extract
- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1 ½ teaspoon pumpkin spice
Method:
Preheat the oven to 375 F.
In a large mixing bowl add sifted flour, baking powder, softened butter and brown sugar. Next add pumpkin spice and cinnamon.
Finally add vanilla extract, egg and then mix together using your hands until a dough is formed.
On a baking tray lay out some wax parchment paper. Break off pieces of dough and roll into balls, flattening them with the palm of your hand and place on parchment paper.
Bake in the preheated oven for 10 to 12 minutes.
Take out of the oven and leave to cool for 15 minutes.
Sprinkle a bit of cinnamon dust over if desired and enjoy!
